CSA Week 2

Same selection of greens as last week. Instead of going for the lettuce, I decided to try spinach, rainbow chard, and collard greens.

I've had collards, but never cooked them before. Rainbow chard is completely new. Haven't cooked it, yet. Have to find a good recipe.

For the collard greens, I used this vegetarian recipe. Most recipes call for a ham hock or some other meat, which I certainly didn't have on hand. This recipe was tasty. I subbed canned stewed tomatoes for the fresh and added the tomato juice to the cooking liquid. I also added some cider vinegar and brown sugar. Very tasty and healthy for my first effort, but probably not a dish I'd go out of my way to make, especially given that they take 45 minutes to cook.

...and there were more delicious strawberries. I made shortcakes this time. Had one for breakfast this morning.

That's some beautiful chard! You can kind of treat it like fresh spinach if you don't find a chard recipe you like.

Hey Danielle,

Chard is one of my favorites. Try cooking up a few pieces of bacon, then remove it and crumple. Spill out all but a tablespoon or two of the grease and wilt the chard in the grease. Then pour in a splash of balsamic. Yum!

Just don't put that chard in with a bacon chocolate bar!
